For the frosting
  1. Preheat oven to 180C / 350F and line a 1lb loaf tin.
  2. Make your flax “egg” by mixing the flax seeds and water together. Set aside to thicken.
  3. In the meantime, beat together the butter and sugar until pale and fluffy.
  4. Add in the rest of the ingredients, including the flax egg, and combine until smooth.
  5. Transfer the mixture into the loaf tin and bake for 1 hour or until a skewer comes out clean.
  6. Leave the cake to cool slightly then transfer onto a wire rack.
  7. Prepare the frosting by mixing the strawberry puree and powdered sugar together. Pour over the cooled cake.
  8. (optional) Add more strawberries, chocolate chunks and any other desired decorations on top.
