Including only 3 ingredients, these cookies are not only gluten-free & flourless, but also call for NO added sugar, no eggs, no dairy. Perfect as a sweet treat in the lunch-box, as a breakfast cookie or as a quick dessert.
In a large bowl, mash 2 overripe bananas with a fork.
Then add 70 gr. of oats and 2 tbs peanut butter, stir together until combined.
If using any add-ons (see notes), add them now and stir one last time.
With 2 spoons, shape dough into 1-inch balls. Place balls 1 inch apart on a baking sheet, and flatten gently.
Bake at 180°C/360°F for 20 minutes or until golden brown. Remove to wire racks to cool. Enjoy with a tall glass of cold plant-based milk ♥
Notes
Variations:
other than the chocolate chips like in the pictures, you can add 2 tsp vanilla extract, 1 pinch cinnamon powder, or 40 gr. of dried berries, raisins or chopped figs/dates.
