2tbspsoy sauce
2tbsptomato paste
1tspturmeric

4tbspcold water
Instructions
In a large pot or crockpot, heat 2 tbsp of water over medium-high heat.
You can add a splash of soy sauce if you want, as we won't be using any oil in this recipe and it helps to caramelize/brown the veggies.
Arrange the mushrooms, seitan or your choice of Vegan protein in the pot, in a single layer. Season with pepper to taste. Cook, stirring occasionally, until the seitan begins to brown at the edges, about 4 to 5 minutes.
Add the onion, celery, and carrots, and continue to cook, stirring occasionally, until they begin to soften, about 4 to 5 minutes.
Add the garlic and cook until it becomes fragrant, about 30 seconds.
Add the balsamic vinegar and cook, stirring, until almost all of it has combined with the veggies and/or evaporated.
Add the potatoes, vegetable stock bouillon, the soy sauce, tomato paste, turmeric powder and the fresh/dry herbs.
Cover with water.
Bring the mixture to a boil then cover the pot with a lid and reduce the heat to medium.
Continue to cook, stirring occasionally, until all the veggies are tender, about 20 minutes.
*If you're making this in the slow cooker, cook on low 7 to 9 hours*
Remove the herbs. In a small bowl, whisk together the cornstarch and water. Pour the cornstarch slurry into the stew and mix well. Continue to cook, stirring, until the liquid has thickened, about 1 minute. Season with salt and pepper to taste.
Serve immediately or store in the refrigerator for up to 4 days - or in the freezer for up to 3 months.
