Hello my beautiful friends! One more tart recipe today, which comes straight from the South of France.
This French rustic tomato tart, or what here would be called une Tarte à la tomate, moutarde et herbes fraîches is a staple during Summer.
Perfect as a quick summer lunch, to bring on a picnic or to serve during a dinner party/apero dinatoire, it will bring a South-of-France touch to your Summer gatherings.
This rustic tomato tart is one of those rare occasions when a famous French dish is actually completely, wonderfully, accidentally plant-based – so it’s suitable for everyone. And in perfect SevenRoses style, it’s also incredibly easy to prepare. I used store-bought puff pastry to make sure this recipe was accessible to everyone out there, but feel free to make your own if you’re so inclined.
Other than that, it’s just a matter of slicing up a big onion, some ripe sun-drenched tomatoes, pick a few herbs from your garden/balcony/windowsill and assemble everything together. Put in the oven and voilà, you’re done!

I also like that when it comes to such tarts, the more rustic it looks the better. All in all, this rustic tomato tart is quick and easy to make and a very, very homey.
This rustic French recipe that most people enjoy in summer, when tomatoes are in season, is a way to embrace cooking seasonally and enjoy/live the moment. Nowadays I only buy fresh tomatoes when they are in season – but if you want to recreate this summery tomato tart in the heart of winter, you still can!
Just make sure to use good quality canned tomatoes (I would personally choose an Italian variety like these Organic San Marzano Italian Plum Tomatoes, but I’m 100% biased), drain them, cut them in slices and place them over paper towels for at least 1 hour in order to absorb the liquid. At that point, you can go ahead with the rest of the recipe.
Finally, what to serve this rustic French tomato tart with?
For a summer meal, you have the choice between a fresh summer salad with tofu feta or a mix of rocket, fresh sprouts, walnuts, pine nuts and vinaigrette, or roasted vegetables drizzled with balsamic vinegar (potatoes, carrots, green beans, broccoli, cauliflower, peas, etc…).
For a comforting dinner, you can opt for a summer zucchini soup, to serve in a bowl right next to it.
